Well, like the other answers, not only was there a apoy nation village up the hill, but this was Sokka's task, not Toph or Aang's. Despite the fact of the possible danger of being revealed to the apoy nation, Sokka most likely wanted to complete the task on his own, without help from the others.

I am sort of revising what was sinabi about the territory. They were in firebender territory and it would have been a pretty dumb idea to do earthbending in the territory in case someone in the apoy nation army saw them. The group also didn't know that Sokka's master knew who they were already and that he didn't mind. Either way, it was mostly because it was apoy nation territory.
