Her development throughout the movie isn't as extreme as Naveen's, but I think the idea is that both characters rub off on each other. At the start of the movie she dreamed of owning her own restaurant, and at the end this dream came true. She is very ambitious and career-oriented throughout, but her lifestyle has changed a lot by the end. She used to overwork herself and constantly stress herself out in order to achieve her goal (a flaw I admittedly share with her, so I'm one to talk!) and by the end she is royalty and has achieved the thing she worked so hard towards. It's not like she can stop working hard (now that she's a restaurant owner and a princess, she has more responsibilities than ever) but she's possibly less stressed now that her dream has come true. Plus, she has Naveen to help her with the demanding workload, so she isn't having to do it all alone.
