I agree with Straggy and princesslullaby. I wouldn't say that princesses are stereotyped, but the movies are. Like, in PATF every African-American sings, dances and loves jazz, in Aladdin, Arabs have mean laws and they kill you if "they don't like your face" because they are cruel bastards, in Mulan, every man is brain-washed, repressed, honour-obsessed freak, in Pocahontas Native-Americans are totally carefree, like, when men returned from war, they acted like they returned from play date, and so on

I agree with cromulanfav, it's not necessarily the princesses who are stereotypical, but the people around them. If any of them are stereotypical, I'd say Pocahontas and Jasmine, what Straggy and princesslullaby said :)

Pocahontas for very obvious reasons.

Jasmine isn't racially stereotyped to Arabs at all, in fact the only racially sensitive thing about Jasmine is that she shares the facial qualities of an Americanised beauty especially when compared to how Arabic the villainous and backing characters look.
