She is playful with her animal friends and, even though she knows her aunts are up to something, decides to amuse them, but I think of the ones left she has the least sense of humor.

She was so isolated and made to fear everything by Mother Gothel for so long that it seems to me like she lost a lot of sense of humor. Where many of the other princesses would've laughed in similar situations, Rapunzel was very frightened and/or confused. I don't remember her doing much of anything very funny in the film, making any jokes or laughing at any jokes. This is less than I can say for Aurora, who seems to be very open to humor as Silverrose1991 explained. I would also say that Snow has a high sense of humor, finding humor wherever she can, especially at the expense of Grumpy and Dopey. XD
