My answer is, that Edward my have not fallen in pag-ibig with Bella if he could read her mind because, he may have taken offence to what she was thinking about him and whatnot.

I think he fell in pag-ibig with her and became so interested in her, was because of that fact the he could not read her mind.
I believe that's why he wanted to become so involved with her and became so interested in her and what she had to say.
